- 2 small-sized sweet potatoes (or one large)
- ½ cup Maple Syrup
- ½ cup Peanut butter
- ½ cup Cocoa Powder
- ¼ tsp Baking Soda
- ¼ tsp Vanilla
- 2 Eggs
- Flaky sea salt
- Chocolate Chunks
- Bake 2 sweet potatoes at 350°F for 60 minutes (or 400°F at 60 minutes for a large sweet potato)
- Once baked, peel and mash in a bowl
- Combine ½ cup of maple syrup, ½ cup of melted peanut butter, 1.4 tsp of vanilla extract and 2 eggs mixed with the sweet potatoes
- Add ½ cup of cocoa powder, ¼ tsp of baking soda and chocolate chunks.. Mix together
- Add to an 8×8 baking dish lined with parchment paper.
- Top with extra chocolate chunks
- Bake at 350°F for 45 minutes
- Top with flaky sea salt
