Roasted Rainbow Carrots

These roasted rainbow carrots are a colorful and flavorful side dish. Tossed with olive oil, herbs, and a touch of salt, they’re roasted until tender and caramelized. Simple, vibrant, and naturally sweet, they make any meal a little brighter.

Main Ingredients

  • 1 lb colorful carrots
  • 2 Tbsp butter
  • 2 Tbsp honey
  • 2 Tbsp brown sugar
  • Fresh thyme
  • Salt & pepper to taste
  1. Clean carrots or peel skin using a peeler. Rinse, towel-dry and place on a baking sheet.
  2. Melt butter in the microwave or on the stove and stir in honey and brown sugar until dissolved.
  3. Spray carrots with coconut oil spray and season with salt and pepper. Drizzle with honey brown sugar glaze and top with fresh thyme.
  4. Roast at 425F for 40 minutes, flipping halfway. Test them with a fork and roast until they are fork tender.
