Roasted Pears

Ingredients

  • 4 red pears, halved and cored
  • 2 tbsp honey
  • 1 tbsp melted butter (or olive oil)
  • ½ tsp ground cinnamon
  • ¼ tsp ground cardamom (optional)
  • Pinch of salt
  • ½ cup mascarpone cheese
  • 1 tsp vanilla extract
  • ¼ cup chopped toasted walnuts
  • Fresh mint for garnish
  1. Preheat oven to 375°F.
  2. Place halved pears cut-side up in a baking dish.
  3. In a small bowl, mix honey, melted butter, cinnamon, cardamom, and salt. Brush the mixture generously over the pears.
  4. Bake for 25–30 minutes until the pears are tender and caramelized, basting once or twice with the pan juices.
  5. In a separate bowl, stir vanilla into the mascarpone until smooth.
  6. To serve, plate warm pears with a dollop of mascarpone, sprinkle with toasted walnuts, and garnish with fresh mint.
