Grilled Peach & Burrata Salad

Ingredients

  • 3 ripe peaches, halved and pitted
  • 1 tablespoon olive oil (for grilling)
  • 5 oz arugula
  • 2 balls burrata cheese (about 4 oz each)
  • ¼ cup toasted pine nuts
  • Balsamic glaze (store-bought or homemade)
  • Flaky sea salt & freshly ground black pepper
  • Optional: fresh basil or mint leaves for garnish
  1. Prep the Peaches:
    Brush peach halves lightly with olive oil.
  2. Grill:
    Heat a grill or grill pan over medium-high. Grill peaches cut-side down for 3–4 minutes, until charred and caramelized. Flip and grill another 1–2 minutes. Remove and let cool slightly, then slice.
  3. Assemble the Salad:
    On a serving platter or shallow bowl, layer the arugula. Tear burrata over the greens and arrange the grilled peach slices on top.
  4. Finish:
    Sprinkle with toasted pine nuts, drizzle generously with balsamic glaze, and season with flaky salt and cracked pepper. Add fresh herbs if using.
  5. Serve immediately. Best with crusty bread or alongside grilled meats.
