Grilled Peach & Burrata Salad

Ingredients
- 3 ripe peaches, halved and pitted
- 1 tablespoon olive oil (for grilling)
- 5 oz arugula
- 2 balls burrata cheese (about 4 oz each)
- ¼ cup toasted pine nuts
- Balsamic glaze (store-bought or homemade)
- Flaky sea salt & freshly ground black pepper
- Optional: fresh basil or mint leaves for garnish
- Prep the Peaches:
Brush peach halves lightly with olive oil. - Grill:
Heat a grill or grill pan over medium-high. Grill peaches cut-side down for 3–4 minutes, until charred and caramelized. Flip and grill another 1–2 minutes. Remove and let cool slightly, then slice. - Assemble the Salad:
On a serving platter or shallow bowl, layer the arugula. Tear burrata over the greens and arrange the grilled peach slices on top. - Finish:
Sprinkle with toasted pine nuts, drizzle generously with balsamic glaze, and season with flaky salt and cracked pepper. Add fresh herbs if using. - Serve immediately. Best with crusty bread or alongside grilled meats.
