Bang Bang Chicken

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs, chopped
  • Salt & pepper to taste
  • 1 tsp ground ginger
  • 1 tbsp cornstarch
  • 1 tbsp neutral oil (for pan-frying)
  • 2 tbsp soy sauce
  • 2 tbsp rice vinegar
  • 1 tbsp honey or maple syrup
  • 2 cloves garlic, minced
  • 1 tbsp fresh grated ginger
  • Optional: sesame seeds, green onions for garnish
  1. Place chopped chicken thighs in a Ziploc bag with salt, pepper, 1 tsp ground ginger, and 1 tbsp cornstarch. Shake until well coated.
  2. Heat oil in a skillet over medium-high heat. Add chicken and cook until crispy and golden on the outside, and fully cooked inside (about 6–8 min).
  3. In a bowl, whisk together soy sauce, rice vinegar, honey/maple syrup, garlic, and grated ginger. Pour over cooked chicken and toss to coat. Let it simmer for 1–2 minutes until slightly thickened.
  4. Top with sesame seeds and sliced green onions. Serve over rice or noodles!
