Bang Bang Chicken

Ingredients
- 1.5 lbs boneless, skinless chicken thighs, chopped
- Salt & pepper to taste
- 1 tsp ground ginger
- 1 tbsp cornstarch
- 1 tbsp neutral oil (for pan-frying)
- 2 tbsp soy sauce
- 2 tbsp rice vinegar
- 1 tbsp honey or maple syrup
- 2 cloves garlic, minced
- 1 tbsp fresh grated ginger
- Optional: sesame seeds, green onions for garnish
- Place chopped chicken thighs in a Ziploc bag with salt, pepper, 1 tsp ground ginger, and 1 tbsp cornstarch. Shake until well coated.
- Heat oil in a skillet over medium-high heat. Add chicken and cook until crispy and golden on the outside, and fully cooked inside (about 6–8 min).
- In a bowl, whisk together soy sauce, rice vinegar, honey/maple syrup, garlic, and grated ginger. Pour over cooked chicken and toss to coat. Let it simmer for 1–2 minutes until slightly thickened.
- Top with sesame seeds and sliced green onions. Serve over rice or noodles!
