Garlic Steak Bites

  • 1 lb NY strip steak (about 2 steaks)
  • 1 tbsp Worcestershire sauce
  • Buttery steakhouse seasoning, to taste
  • Avocado oil, for cooking

Garlic Herb Butter

  • 4 tbsp softened butter (½ stick)
  • 1 tbsp chopped chives
  • 2 garlic cloves, minced (about ½ tbsp)
  • 1 tsp lemon juice
  • ½ tbsp Dijon mustard
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ tsp cayenne pepper
  • ¼ tsp paprika
  • 1 tbsp chopped green onion

  1. Prepare the steak.
    Trim the NY strip steaks into 1-inch bite-sized pieces. Toss with Worcestershire sauce and buttery steakhouse seasoning until evenly coated.

  2. Let the steak rest.
    Allow the seasoned steak bites to sit for 15–20 minutes at room temperature. This helps keep the steak tender after cooking.

  3. Make the garlic herb butter.
    In a small bowl, combine the softened butter, chives, minced garlic, lemon juice, Dijon mustard, salt, pepper, cayenne, and paprika. Mix until well combined. Set aside.

  4. Sear the steak bites.
    Heat a cast iron skillet over medium-high heat. Add a thin layer of avocado oil. Once hot, add the steak bites in a single layer and sear for about 2 minutes.

  5. Flip and finish cooking.
    Flip the steak bites and cook for another 1–2 minutes, or until they reach your desired doneness.

  6. Add the garlic butter.
    Reduce the heat to low. Add 2 tablespoons of the garlic herb butter and toss the steak bites until coated and glossy.

  7. Serve.

    Remove from heat and top with chopped green onion, extra chives, and leftover herb butter.
