Garlic Steak Bites
- 1 lb NY strip steak (about 2 steaks)
- 1 tbsp Worcestershire sauce
- Buttery steakhouse seasoning, to taste
- Avocado oil, for cooking
Garlic Herb Butter
- 4 tbsp softened butter (½ stick)
- 1 tbsp chopped chives
- 2 garlic cloves, minced (about ½ tbsp)
- 1 tsp lemon juice
- ½ tbsp Dijon mustard
- ¼ tsp salt
- ¼ tsp black pepper
- ¼ tsp cayenne pepper
- ¼ tsp paprika
- 1 tbsp chopped green onion

- Prepare the steak.
Trim the NY strip steaks into 1-inch bite-sized pieces. Toss with Worcestershire sauce and buttery steakhouse seasoning until evenly coated. - Let the steak rest.
Allow the seasoned steak bites to sit for 15–20 minutes at room temperature. This helps keep the steak tender after cooking. - Make the garlic herb butter.
In a small bowl, combine the softened butter, chives, minced garlic, lemon juice, Dijon mustard, salt, pepper, cayenne, and paprika. Mix until well combined. Set aside. - Sear the steak bites.
Heat a cast iron skillet over medium-high heat. Add a thin layer of avocado oil. Once hot, add the steak bites in a single layer and sear for about 2 minutes. - Flip and finish cooking.
Flip the steak bites and cook for another 1–2 minutes, or until they reach your desired doneness. - Add the garlic butter.
Reduce the heat to low. Add 2 tablespoons of the garlic herb butter and toss the steak bites until coated and glossy. - Serve.
Remove from heat and top with chopped green onion, extra chives, and leftover herb butter.
