Chilled Watermelon Salsa

  • 2 cups watermelon, seedless, cut into 1/2-inch dice
  • 1 jalapeno, minced
  • 1/2 cup fresh cilantro, chopped 
  • 2 tbsp of fresh lime juice
  • 1 garlic clove, minced
  • 1/2 tsp salt
  • 1/2 red onion
  1. Place the diced watermelon, chopped red onion, sliced jalapeño pepper, and fresh cilantro into a large bowl.
  2. Drizzle fresh lime juice over the ingredients in the bowl.
  3. Gently toss the ingredients using a large spoon or salad tongs.
  4. Mix until all the components are well combined and evenly coated with lime juice and salt.
  5. Serve immediately for a fresh taste, or refrigerate for a cooler and more infused flavor.
