Blueberry French Toast Casserole

  • 1 loaf French bread, cubed
  • 8 eggs
  • 2  cups milk 
  • ⅓ cup maple syrup
  • 1 tablespoon vanilla extract
  • 2 tablespoons cinnamon
  • 8 ounces cream cheese, cubed
  • 1 cups fresh blueberries
  1. Butter a 9x13 pan then layer with half a  loaf of French bread, cubed, 4 oz. of cream cheese, cubed and.5 cup fresh blueberries. Repeat with remaining.
  2. For the custard: whisk together 8 eggs, 2 cups of milk, ⅓ cup maple syrup, 1 tablespoon vanilla extract and 2 tablespoons of cinnamon.
  3. Pour the custard mixture evenly over the layered bread then gently press down the bread to soak up the liquid.
  4. Cover and refrigerate overnight.
  5. Bake covered at  350° degrees for 30 minutes and then an additional 30 minutes uncovered.
