Sweet Potato Brownies

  • 2 small-sized sweet potatoes (or one large)
  • ½ cup Maple Syrup
  • ½  cup Peanut butter 
  • ½ cup Cocoa Powder
  • ¼ tsp Baking Soda
  • ¼ tsp Vanilla
  • 2 Eggs
  • Flaky sea salt
  • Chocolate Chunks
  1. Bake 2 sweet potatoes at 350°F for 60 minutes (or 400°F at 60 minutes for a large sweet potato)
  2. Once baked, peel and mash in a bowl
  3. Combine ½ cup of maple syrup, ½ cup of melted peanut butter, 1.4 tsp of vanilla extract and 2 eggs mixed with the sweet potatoes
  4. Add ½ cup of cocoa powder, ¼ tsp of baking soda and chocolate chunks.. Mix together
  5. Add to an 8×8 baking dish lined with parchment paper. 
  6. Top with extra chocolate chunks
  7. Bake at 350°F for 45 minutes
  8. Top with flaky sea salt
